Smoking a pork butt, first time. Temps here are in the mid 40's to low 50's overnight. Will the wsm hold its temp over night using the minion method or should I set the clock to get up every few hours?
I won't make a bit of difference. As long as it's not windy, the wsm will hold temp in very cold weather. 40's and 50's isn't even cold by wsm standards.
I cooked overnight last night (still cooking) and the wind was/is terrible. We are having 20-30 MPH winds and I have no where to put my WSM to get out of the wind. I put 2 Bone-in Pork Shoulders last night at 7:00 and woke up at 4:00am and put more charcoal in. That held until 7:00am (fell back to sleep) and restoked again. I'm guessing I would have made it all night without the wind. I should be ready to go for the Vikes-Packers game.
Oh and then it started to rain. I ended up pulling the two butts at 3:00pm (20 hour cook). They turned out great but was a realy chore with the wind and the rain. Windbreak sounds good and would be easy to make and I could even put a tarp roof over it to keep the rain off.
