Cooks Planned for Labor Day Weekend


 
Grilled ahi tonight, over flageolets with mirepoix and thyme jus, lemon-basil oil, fennel pollen.

Tomorrow I'm not sure. Maybe brisket on the kettle.

Monday I'm traveling...
 
Everyone is yammering for pulled pork and extras to take home so I've got 3 pork butts in the fridge that will go in the smoker early morning!

I'm also be throwing some shrimp on the grill to keep us busy until the smokin' is done.
 
Smoked a grass fed beef brisket low and slow yesterday. Done two hours early. Put it in a cooler to hold it. Tender and moist--better than I thought it would be. Great flavor. Third brisket that I have smoked and by far the best.
Smoke Vault gas smoker. Cabernet barrel chips.
 
Did some loin ribs and some BBQ chicken for my brother who doesn't eat pork. Really the best ribs I have ever done, I put some cayenne into the seasoning, and the ribs glazed up just right.

Last night, I did flank steak pinwheels with toasted pine nuts, gorgonzola and flat leaf parsley. Also did some Provencal chicken (my best bone-in chicken cook so far), my go to asparagus and some fresh corn with basil butter (best corn of the season). Tonight? Dunno. I've been wanting to try paella. We'll see if my motivation is sufficient.
 
I bought a 5 lb. pork loin the other day and was planning on slicing a few steaks from it and putting them on the gas grill and putting the rest of it in a zip lock with apple juice and some other goodies and it would go on the smoker today (was going to try out my new ET73, too!!!). As soon as I cut the first steak from the roast, the entire kitchen instantly smelled like crap. Horrible crap. Took it back to the supermarket where I bought it and they said they had several people return them for the same reason. They were out of them (maybe pulled them off the shelf) and would have more today.

Just wondering how many people bought them and threw them in the freezer not knowing they weren't any good. Of course, it would be too late to return them. I learned to open the package and smell the meat before I put something in the freezer.
