Thanks for all the responses. So eveything worked out. I did end up watching them all day because this old pit they rented would not get up to temp and once it did I had to keep adding fuel to keep it up. I went through about 40 lbs of charcoal! I have to say that these ribs were awesome. They did take a little longer then normal because for the first hour I could not get the temp above 179. It took a little over 6 hours to have all of them finished. I had to move ribs and spray them every hour or so after the 3 hour mark. I used Texas BBQ Rub and a mixture of apple juice and vegetable oil as the mist and never foiled and set the pit up as a indirect grill. Again thanks for all the help and if I can figure out how to download the pictures I will. I will have to say it was a long day but man was it fun to see the faces on the people that I have never met before light up when they had real BBQ. I think one guy must of eaten 5 lbs all by himself! Thanks again everybody and I love this site. I have been reading posts for a couple years now and this was the first time I asked a question and the response was amazing. I even had responses from the names that I read all the time. Felt like a rock star!
