Cooking a butt tomorrow...a few ?'s

I am planning on cooking a 2 8 pound butts tomorrow morning.

I have a few questions...
1. I got the maverick thermomete with the 2 probes. I know I use one to probe the meat, but where do I put the other probe? Do i feed it thru the top hole or can I crimp it under the lid of the WSM?

2. I plan on throwing the butts on at 7 am and watching them for 4 hours before I head to work at 11 am. I get out of work at 6 pm...from what I read I feel that the butts will be ok for those hours I leave them unattended...do you guys think its wise to leave them alone that long or should I just wait till the weekend when I know I have more time...but i really want pulled pork!!
 
1. Either would work, but just don't use the word "crimp" when referring to the wire. /infopop/emoticons/icon_eek.gif Under the lid would be easier when it comes time to open up to mop.

2. Unattended as in you not home, or nobody home? I'd never leave the cooker totally unattended.
