pretty darn lucky I am to have a butcher with fresh cuts available anytime i want them.

Now these are the legendary loaded Lampe plates that I know. Both of those plates are perfect!That hasselback looks like it was sliced with piano wire!

Woo Jim. Another great post. I think you're right -- what a blessing to have a good local butcher. Those chops, raw and grilled, look very good.

Great looking dinner Jim!. Cutting the potato Hasselback style give the potato crispy edges? I have never tried making them.
 
'Eyes, chops, and that other stuff looks SuperDuper Jim!
I have chop and hasselback envy that's fer sure!

Tonight's store bought chops are sitting in a mix of apple juice and Wicker's as I type.
Hope they turn out nearly as well as yours!!!

John, the edges do get crispy(ier) than the insides, which i am STILL working on...
