Cook for the big game

We have been invited to a party for the game this Sunday and everyone was asked to bring something, I was instructed to smoke something (I'll take that as a complement) My plan is pepper stout beef, so here are a few questions,

Will the recipe I found here feed 15 people using a 4lb. chuck?
Jim L. I noticed you substituted Poblanoes in place of bell, how did that turn out?
Not sure if I will cook Saturday or Sunday, I'm sure this dish holds up well
Any other input would be greatly appreciated
Did I miss anything, since I never made this before, but it looks pretty straight forward

I'm not sure how much it feeds. I did it last time and bought the meat at Sam's which was a two pack. It ended up being 5.8 lbs and i had 2 lbs left over feeding around 8 people. I guess it depends on how big your guest make the sandwiches. I would assume someone else would be able to answer how much per person. I would think 4 lbs is on the light side for 15 people, but then again i'm sure there will be other food.

I used just bell peppers and it was good.

Normally, you would figure half a pound of meat per person. At the fire station, I do 3/4 of a pound per person since they are big eaters, but I usually have leftovers.

Since you are doing PSB which is mixed in with veggies, and there will probably be a lot of other food you might get away with 4lbs but I would probably bump it up some. Guess it depends on how good you make it.

probably not, just sayin football fans are usually hungry carnivores also. BTW that is a big compliment that they want you to bring something you smoked. youll lose some weight on that chuck once its smoked out nice, id suggest two chief...

Last year we fed 50 members of the CBBQA with triple that amount. The chafer was totally empty by the end of the serving session. *May have run out early, don't know* Of course, we were not the only main course available. Might suggest cooking more than you need as any leftovers can surely be saved for later.
 
If what you're making is the main course, I'd cook two of those chucks. If it's just part of a big spread, one should be fine. You won't have any leftovers (it's that good), but other people won't feel bad that their food didn't get eaten because everybody filled up on your beef.

I've only made it once, but it was for a party also. It's dead simple and you almost can't screw it up, just leave plenty of time. If you're racing the clock, the beef will know and will refuse to shred. Don't ask me how I know this. :)

When I made it I tossed in a poblano along with the bell peppers. It gave it just a little hint of heat which was really quite nice with the beef.

It will stand up just fine to re-heating. Cook it the day before so you're not rushed, then refrigerate immediately. I served it in a crock pot which worked out great--you can put it on high to re-heat to safe temperature quickly (160F), then set it to warm until it runs out.
