Leave it to me to decide to smoke a ham on the coldest day of the year! It was -32C when I started and warmed to a balmy -28C by mid afternoon. The cook went off without a hitch. I was surprised how easily the WSM maintained 200F-225F despite the frigid temps(it wanted to go hotter). Any questions just ask!

Pics look great! Looks like there was no wind to contend with .. Do your neighbors hang out on the railing with plates in hand during the Summer months?

Does your hat say 'Burton' or 'Burrrrr...'?

Either way, nice looking ham, despite the temps!!!

Nice. I love the shot of the smoke billowing out of the chimney starter. I have a big ham I've been wanting to do, also. Looks like I'll need to do it soon.

MMMMM....love double smoked ham...real holiday treat. I find it actually much easier to regulate temps in cold weather...you can ballance a nice fire against the cold better than trying to keep the fire really, really low.
