cold snowy/rainy and windy day to smoke some butts :(

the boss has given me the day off paid and has supplied everything but the spices and wood(i have to keep some things secret

) for me to smoke 4 butts to bring to his MI vs. OH party tomorrow. only thing that i don't like is walmart by him was out of royal oak lump so he went to HD and got me 2 bags of cowboy

i used cowboy years ago in my offset and wasn't impressed. i guess i'll try it in the WSM and see if i am still not impressed.

i have to have the butts done and at his house ready to pull by 11 in the morning. since it is low 40's with windchills in the low 30's, rain/snow/windy i guess i'll start them around noon. i figure they will be done between 8-9am, so i'll have plenty of time to rest them in a cooler before i have to leave. days like this make me happy to have a pit minder and a maverick et-73 redicheck

oh, and i just made up a quadruple batch of no.5 sauce and a big batch of east carolina vinegar sauce

Try to really pack that Cowboy in there as tight as you can, it can burn hot quickly if you don't watch it closely! I don't care for it either!

You're timing sounds good too Tony!

I'm putting 4 butts on tonight when I get home from work as well. No time frame for these, as they're being vac sealed and delivered Monday morning! Good luck on your cook!

I love cooking when it's nasty and cold out, seems to add a little ambiance!
 
yeah larry, i packed most of a bag in there real tight with a few chunks of hickory in the middle. i mounded it up so high that it's almost touching the water pan. when i get the butts on i'll take the door off and light a few coals with my torch,drop some cherry chunks on top and turn the pit minder on. i always leave the top vent wide open until the WSM has been at the target temp for at least 2 hours and then i crack the top vent barely open. i figure before i go to bed tonight i'll tap down the coals and add more just incase. my only other thing to figure out is if i'm going to try and get all 4 on the top rack or just go ahead and use both racks. all the butts are at least7-8 pounds(two 2 packs from sam's). i was worried when he got them from sam's that they would be boneless, but the weren't.

at least the rain/snow stopped and the sun is starting to peak out. the weather man says the wet weather should be done.

Put two on the top, two on the bottom. They'll finish at the same time and you'll have good airflow.

Only time I put more than two on the grates is when I do a case and have ten butts, then I put 2 on the bottom of each WSM and then 3 on the top of each WSM. I normally put the biggest ones on the bottom.
 
i already went and dug the bottom grate out of the shed and rinsed it off. i just hate using the lower grate. i keep saying i'm going to mod some handles on it so i can take it straight from counter to WSM with the meat on it already, but i haven't done it yet. i may get a 22.5" WSM just so i can do 4-5 butts on the top grate

i plan on handing out some cards to people advertising by the pound BBQ. a few good orders and i could maybe justify the cost

Which Walmart was out of the RO so I don't go there? I've never used it, but figured I'd try it this time if I can find it.

i'm assuming he went to the one by his house out in redmill commons. i think i recall that one being out the last time i went. the one on princess anne and lynnhaven still has a ton. i heard that walmart is no longer getting RO lump so when it's gone from a store it's gone for good.

Tony, There was a thread about that earlier in the year. That rumor is false. Good luck with your cook. It stopped snowing here and the sun is trying to come out.

That is a really cool boss you have there! Is he pulling for MI or OH? Great football rivalry.

Good luck with the cook. I am sure it will go very well even if you use the Cowboy.
 
Let's just say it sounds like your day is going much better than mine. Where are the pictures?

It's rivalry weekend isn't it. My #7 (BCS Poll) ranked Utes are hosting our rival # 14 ranked BYU. Very important game for us with a BCS bowl possibly hanging in the balance playing Florida or Bama. Go UTES!!!

and my boss is a VA cavaliers fan. the party is for his 2 best friends. 1 is a OH fan and the other a MI fan. looking to be about 35 or more people there. i'm not looking for there to be any pork left even though he is grilling up 6 packs of brats.
 
That sounds great Tony. I think brats sound great for this weekend too. I don't suppose one more person would be noticed at the party... even if I wear Tarheel Blue? See you tomorrow! (Just kidding)

I'm sure the food will disappear but one of his friends will go home disappointed (I am guessing the UoM fan, but anything can happen even in Columbus with those two teams.)

I put my 4 butts on last night around 6 and even with temps in the 20's and wind gusts up to 30+ mph the WSM did it's job again! I got up at 5, (which is sleeping in for me) and gave the coals a little stir, still have plenty left and the butts are at 157º.

i was pulling them off and wrapping in foil when you wrote that. a little earlier than i hoped but they are in a cooler with a bunch of sheets and towels that were ran in the dryer for 25 minutes. still had plenty of coals left too. the maverick woke me up at 2:30 am for low temp(220º) so i went out figuring i'd have to add some coals, but there were plenty, i just had to knock them down a little which i forgot to do when i went to bed.

as suspected there was none left. and i also got 6 superbowl orders. 20 pounds for each order at 6 bucks a pound.
 
$6.00 LB? your very nice Tony. I sell mines at $8.00 LB for pork got to figure in your cost, are you supplying the meat or them? Any way have fun makeing $$ on what you love to do.
