Wanted some thing light for dinner tonight. So I grabbed some cod I caught a few weeks ago. Threw down some foil lubed it with a little olive oil lined it with onions tomatoes and lemon rounds. Laid cod fillets on that and seasoned two of the packets wit salt, pepper, granulated garlic, and some parsley. The other two packets were prepped with some Cajun seasoning. I did not close the packets completely because I wanted the fish to take on the flavor of the smoke from charcoal. To which I added a few chunks of apple wood. Tracey plated hers with baby spinach rice and broccoli. I just plated mine with the broccoli and rice. Tracey couldn't stop raving about the fish.
