Cleaning your smoker


 
Do a search and you'll find a lot on this topic. Most don't clean the inside of their cooker. The top will tend to get a flaking that needs to be brushed off so I check that before each cook. I'll clean the grates and sometimes I'll rinse out the charcoal bowl but that's about it.

Ok I'll search and see what i come up with. I just finished cooking, and eating no water pan chicken thighs. I don't know if it is my imagination or what, but the chicken tasted a little greasy to me. Thought maybe it might be the cooker. Maybe it was that the thighs were pretty fatty, all that fat dripping onto the fire. Maybe that was what I thought I tasted. Usually do chicken leg qtrs. Don't seam to have that taste.

If I did chicken thighs, I would put the pan in wrapped in foil and no water. The chicken grease dripping on the charcoal could indeed be the reason for the off flavor. I suppose some would like that flavor, but I don't.

I thought it tasted like a "Slghtly greasey" film on the meat. As I said earlier the thighs were very fatty. When I do the Leg Qtrs., I usually trim some of the excess fat off them, maybe that's why they seam to taste a little diiferent.
