K Kruger TVWBB 1-Star Olympian Jul 16, 2005 #2 I use cinnamon in several rubs. It works well with chile peppers, thyme, garlic, allspice, coffee, cocoa, oregano, garlic, onion, clove, and several of the Indian and SE Asian spices. It can be overdone though so be careful with quantities.
