Cinnamon bacon?

In an episode of the TV show Justified, one of the characters was frying cinnamon bacon and commenting on how wonderful it smells.

My research finds that cinnamon bacon seems to be a Kentucky thing.
(the show is set in KY)

I started the cure on half a belly yesterday using my ususal, Morton TQ & maple sugar.

This KY smokehouse states:
"We hand rub our very own blend of cinnamon, brown sugar and other seasonings before smoking this bacon to perfection."

I'd like to try cinnamon on a portion of my bacon.

Any thoughts on when it should go on?
Now, before curing, or after the cure and rinsing.

It sounds to me like the smokehouse is putting it on just prior to smoking.

I've never tried this. Looking forward to hear about your experiences.
i'm sure you know that cinnamon is a very potent spice. A little goes a long way.

If I'd give it a try, I'd use it in the cure, rinse, and adjust after smoking.
 
I little dusted on before smoking should work. I think if its in your cure, it might be a little over powering. Also consider Ceylon, as it's a bit mellower than cassia
 
My thoughts too Jeff.
I plan to mix a small amount with some organic cane sugar, and rubbing it on just prior to smoking.

I might grate a Penzey's cinnamon stick, hoping for a fresher taste.
