Cider vinegar

For the No. 5 Sauce and Dwains finishing sauce they call for cider vinegar. Is there a particular kind of cider vinegar to use? Are we talking about Braggs ACV?
 
I use Apple Cider Vinegar. The current bottle says Whitehouse but your brand is probably just as well.

Also, it's kinda cool people calling it Dwain's Finishing Sauce, but I can't take credit for it. I probably found it on the internet somewhere.

Braggs is fine. My preference is for an unfiltered and unpasteurized vinegar. That said; using Heinz or a store brand is (imo) perfectly acceptable in this case.

Good to know......so the "mother" in the braggs acv doesnt have any bad effects on the outcome? that stuff worries me...lol
 
No worries! Made two gallons of apple cider vinegar a couple years ago using the Braggs as a starter, Great stuff and plan on starting a new batch in the fall when cider is available.

I've made a bunch of hard apple cider this year. One thing I've learned is that if you're not super careful with your sanitation your hard cider will turn into vinegar after a little while.

My first batch did this.... started out really good, but developed a slight vinegar hint. I kept drinking it (it was good!) until my next batch was ready & I left the old stuff out for a week or two. I made some #5 sauce with it :) I used a lot more vinegar than #5 calls for since mine was so weak, and it really turned out well.

I'm not certain on all of the process, mine was a mistake, but a quick search turned up this:

Thanks Clint for the reply....Makin vinegar kinda has the same appeal as makin moonshine....Jus something I've always been interested in....Thanks for the links....

I'm guilty of doing this. When I came across the recipe, you had posted it. When I 'share' the recipe, I call it Dwain's Finishing Sauce. Run with it brother... lol
