CHUCK ROAST, GRILLED OR SLOW SMOKE LIKE A BRISKET


 
Yeah, chuck eye, chuck roll, and many of the other chuck cuts, are not easily found here where Moses lost his sandals. :D Or I'd need to shop at places I don't care to spend my $$$ at for many reasons
 
Well, I'll grab another small chuckie and give that a go. Basically looking at pretty much same temps as brisket then.
Guess I never saw your reply, apologies. But yes, cook it exactly like a brisket. And me, personally, I pull it, rather than slice. I found the specific cut when I was searching for "pulled beef", and that is the only way I have had it.
 
Just did a chuck cooked like a brisket. Turned out ok, but not the same. I do them because there are just two of us at home, and a brisket is a lot of meat.

Well two stores have lowered there prices on three different types of Chuck Roasts, I am going yo check them out and pick up a couple good sized ones for next time. I would also like to get a smaller one for a crock pot cook which would be good as the temps are dropping.
 
I cubed up a chuck roast and cooked it in my instant pot with a few veggies the other night.
It was my best chuck roast cook.
I’m never going to try to mimic a brisket cook with that cut again.

This was the first time I cubed and seared a chuck roast rather than trying to sear a big portion of chuck.
I think it makes a difference.

Yep, I don't always "cube" it but find in my pressure cookers it's FANTASTIC to work with. And versatile. It also make outstanding Italian beef sandwiches. Not the kind you find in a fast food or a beef stand (though some of those really are great) but the kind I learned how to make from my grandma and my mom

An Italian beef?
Omg I haven’t had a good Italian Beef since I did a project in the Chicago area a long time ago.
Lots of good food in that area.

I think there may be chuck roasts and then there are chuck roasts. The first one we smoked a few years ago we were not at all happy with. It was rather large, took forever on the WSM, was fatty and kind of nasty. I pulled it like a pork butt, but said I am never doing one of those again...give me brisket any day. Not long ago I was in Food Lion and saw a small Natures Promise chuck that was about 2-3lbs I think, nice square, lean and like a 1/2 off manager's special I could not resist. I bought it and put it indirect on my little Char-Griller Patio with some wood chunks for about 4 hours. Came out fantastic with a nice smoke ring and as good as a brisket. Wish I had taken a few pics.
