Guess I never saw your reply, apologies. But yes, cook it exactly like a brisket. And me, personally, I pull it, rather than slice. I found the specific cut when I was searching for "pulled beef", and that is the only way I have had it.Well, I'll grab another small chuckie and give that a go. Basically looking at pretty much same temps as brisket then.
Yep, I don't always "cube" it but find in my pressure cookers it's FANTASTIC to work with. And versatile. It also make outstanding Italian beef sandwiches. Not the kind you find in a fast food or a beef stand (though some of those really are great) but the kind I learned how to make from my grandma and my momI cubed up a chuck roast and cooked it in my instant pot with a few veggies the other night.
It was my best chuck roast cook.
I’m never going to try to mimic a brisket cook with that cut again.
This was the first time I cubed and seared a chuck roast rather than trying to sear a big portion of chuck.
I think it makes a difference.
