A few weeks ago My son told us he was going to be home for Christmas, so I asked him what he wanted for Christmas dinner. Without hesitation he asked for ribs. Far be it from me to keep him from getting what he wanted.
So even though it was 16 degrees when I started this, I busted out the Webers.

It was a great day. Even the birds were enjoying my smoking.

If you look close you can see the bird at the feeder.
So after about 6 hours this is what I had going.

Asparagus with mushrooms onions and garlic.

Au-gratin potatoes

Stuffed Mushrooms.

Ribs, pork, and to finish off the dinner, grilled Pineapple.

I had some trouble with the WSM getting to temp. I ended up firing up another mini chimney and adding it to the mix. That did the trick.
This was the first time I used the WSM to cook Country style ribs. It's not going to be the last. They were juicy, tender, and just the best ribs I've made to date.

Mark- very nicely done & a great Christmas memory for sure! No Apple Pie to keep you warm while cooking?!? ;)

Merry Christmas & Happy New Year to you & your family!!!

Thanks everyone!
Today I asked Zach what he wanted for dinner, and he got a sly look and said, "How bout ribs." I think that kid likes ribs:rolleyes:
Like mentioned, this is now going to be our Christmas dinner tradition.
No apple pie this time, that stuff will bite ya back:p
