Did my Santa Maria rub and let sit at room temp for about 30 minutes IMG_6730.jpegGot the Performer going and added two chunks of peach. 🍑 IMG_6731.jpegLet them smoke for a bit until they got to about 135 then did a searIMG_6735.jpegWas really happy with the slaw! Something about this combo of food just screams Summer! IMG_6736.jpegCheers!
 
That does look good.
I have to confess that at first I thought you used peach preserves in addition to smoke.
I used to smoke duck with orange marmalade and that was very tasty.
