Chops 'o Pork

Dear TVWBB, forgive me, for I have sinned. It's been 15 days since I last fired up my Weber grill.

It's also been cold and snowing. In April :( global warming and all that.

Anywho, I made some pork chops tonight. Extra thick and juicy ones from Costco. Made a quick brine and soaked em for a few hours. Cooked indirect until 145, slathered in BBQ sauce and then seared over a pile of hot coals.

Plated with green peas and sprouted rice with quinoa cooked in homemade chicken stock.

For those that wanted to see some Thai BBQ inspired food, my buddy came over tonight to make us a Thai feast and we re-heated some of the pork chops and served them with Penang curry sauce.
