I'm trying to smoke some of the garden's jalapenos. I'm going for low and slow using the snake method and realize this needs to be a long time smoke. Anyone have any experience or advice? Shooting for 125-150 until they look done, any thing else I should look for? I cut them in half to shorten cook time.

The last couple of batches I cheated. Gave them a day of smoke and finished in the dehydrator.
 
I use a hotplate and smoke for 5 or 6 hours then into the dehydrator. The first time I did it was with a handful of coals, keep the heat as low as possible. 2 or 3 coals and a chunk of wood will do it.
