Just a pot of chili I whipped up this weekend.


Over The Top Smoked Chili

Started off with some chuck roasts rubbed down with some Kitchen Bouquet browning seasoning.
I am smoking 4, but only using 2. The others will be sealed and frozen for later use.

I like to do a quick sear on the Blackstone.

While preparing the chuck roast, I brown up a lb of bacon in the dutch oven.

Add in some peppers and onions

then all of spices

From there, we head on a snowy day to the preheated Smokefire

chili pot goes directly under the chucks to get some of those good renderings.

185 degrees, time to pull

Then wrap to rest, and refrig overnight.

The next morning, I gather up the remaining ingredients

Then let it simmer away all day .......

Very much enjoyed by the family while watching the
Chiefs playoff win tonight. I only had a couple of bites.
I ended up just eating a bowl of chicken soup...... after losing my taste and smell late this afternoon.
 
That looks fantastic, Dave! I've done lots of brisket chili, but never chuck.....good reminder that I could substitute if I didn't have brisket on hand.

No taste & smell sounds a bit ominous! Hope you're ok!

Up at 3:30 AM like always, feeling fine, still can't taste or smell.
Work protocol only says to stay home if you have a fever,
which I do not. I will be enjoying a big bowl of chili for lunch,
which reminds me, I need a final plated pic.

Great looking chili Dave! Quite a process to make as it should if you want great chili. Hope you get your smell and taste back soon.

I am fit as a butcher's dog.
Taste and smell back to half by Wednesday, and was
normal again by Saturday. I have absolutely no idea
what caused that. I have never lost my taste and smell
in my nearly 55 years. I never had a single other symptom
that could possibly be covid related.
