I've done this recipe many times, using many different meat substitutions (ground beef, brisket, even tri-tip on occasion):

I originally got this recipe off the Big Green Egg forum, but the link above was what came up on a Google search.

EDIT: ...and, yes, I know that Texas chili purists don't consider beans an acceptable ingredient, but, I like it, and I'm not from Texas!
