JUST PUT 16 THIGHS ON. NO WATER PAN AT ALL. NEVER DONE THIS BEFORE. HOPE IT COMES OUT BETTER THEN MY LAST CHICKEN ON THE SMOKER. I TOOK SKIN OFF AND AM THINKING ABOUT A HOUR. WISH ME LUCK. ONE PIECE APPLE AND ONE PIECE HICKORY. SWEET BABY RAYS ON THE SIDE. I WISH I WAS MORE COMPUTER SAVY SO I COULD POST SOME PICS. MAYBE ILL GET MY 6 YEAR OLD TO HELP ME. HAVE A GREAT DAY
 
You should start by asking your 6yo where the CAPS LOCK KEY IS.

When I do thighs on my WSM with no water pan (essentially grilling), it doesn't take an hour.
 
Corey any reason for taking the skin off? Imo the skin bastes the meat while the fat is rendering, u can always pull the skin once the chicken is done. Keep a close eye on the chicken make sure it does not dry out on u. First site of clear juices its done, gl on ur cook.
 
i always pull skin so when i sauce it its on chicken. if i leave skin on when i sauce i end up pulling off skin when i eat it and all sauce comes with it

My teen agers thought that I was getting dumber by the moment - until they reached the age of 30, then they started believing that I actually knew some things!
