Chicken Sandwich

I make this every so often. Tasty sandwich.

Starts with a Peruvian green sauce.

Pounded and wet brined some chicken breasts. Toppings made an appearance.

Grilled on the Genny. Slathered with sauce on each turn.

Cooked to about 160° and rested. Got the ciabatta roll ready. Mayo and ground-up potato chips on the bottom.

Mayo and more green sauce on top bun, then topped with lettuce, red onion, heirloom tomato, and bacon. Fresh watermelon in the bowl. He was a bit camera shy.

Not pictured were more chips and a pickle. Honestly, really righteous sandwich. A bit labor intensive but worth it.
