Chicken Breast Salad with Mixed Melon Salsa

Tried this one out tonight:

Really liked it and can see it being even more enjoyable in the 'dog days' of summer when it is crazy hot out. I'd probably go a little less aggressive on removal of the jalapeño veins so there'd be a bit more heat. And I might try a splash of white vinegar in the salsa to give it a little zing.

Chicken off, 'gus ready to go on while the protein rests (yes, the Performer's table is in dire need of a deep cleaning):

Chicken sliced and plated ('gus was on the side, along with a little rice pilaf - I didn't have either: this was way more filling that I thought it'd be)

 
Jim, Kim and I are huge salad fans. Thanks so much for posting the recipe. The pic looks fantastic. You will see a copycat post before too long!:)
 
Jim, I'm ditto Robert T we've got over a week starting this Saturday in the 100* so anything simple and cool is great. This was an outstanding cook, thanks for sharing.
