Chicken and Ribs

First Smoke using an empty water pan. It was really different but the finished product was great.
 
Nice color on the ribs and chicken. What temp was it running? Did you finish faster without water?
 
I ran the temp at 275 for entire cook. 2 hours on ribs to set bark then wrapped for 1.5 hours. The chicken cooked for 1.5 hours to get to 165 in the breast. I could not believe how fast the temp got up to 275 with no water in pan. Also consumed half the fuel I usually do with water in the pan.

Nice chicken and ribs! I use the empty water pan with the clay saucer as a heat sink - I find cleanup a whole lot easier than trying to skim the fat off the water in the pan and dispose of it. I'm usually up to temperature within 30-45 minutes, depending on how much charcoal I use to start with the minion method.
