i do eat a balanced diet not just chicken believe it or not! :), put some wings in a 16 hr brine an boy oh boy did it pay off juiciest wings i have ever had. Cooked on a local Oz wood we call for short "black wattle" decided to give the wsm a day off been working her hard since i bought it! and used my little off-set

Mmmmm...... wings!!! There's nothing wrong with eating a lot of chicken Glen. I love that dirty bird. :cool:
 
I never get tired of wings, whether on my pc screen or on my plate. Your's look fantastic! I've never brined wings before but I should try it.

Neil i use this formula for my brine...sorry mate but you might have to convert i use metric - 1 x tablespoon each of salt & brown sugar per litre of water and add extra things like garlic ect depending on what it is i'm doing.
