I'm trying to find a chemist who might help me make sense out of the ammonia smell I noticed at the end of a spare rib cook.

What type and brand of charcoal were you using? Many people have reported smelling ammonia, believed to be coming from the charcoal. South American lump brands mostly. Ammonia is used as a catalyst in power plants and other industries to reduce NO (or maybe NO2) emissions. It may be used in the production of charcoal too. Just a guess.
 
Thanks, Steve. That is interesting input.

I was using a bag of Kingsford that I had opened and used for my previous cook. No smell after that cook.
