Shopped a local, mainly Hispanic oriented, multi-ethnic grocery today. Most independent grocers in the SW Chicago suburbs are multi-ethnic. Bought something I've never seen before - center cut pork chops still attached at the backbone - 6 chops, 3 pieces. These are nice - about 1 1/4" thick and the three pieces weigh a little over 5 1/2 lb.
They're rubbed with ... Cleaned my rub shelf last weekend and combined 5 or 6 jars that had just a little left in them.
Will go on the WSM in the A.M.
Also bought about 5 lb. of fresh pork belly. Will be making bacon.
