I have seen a few Carne Asada cooks here and decided to try it myself as I have loved the dish at several local taco trucks. This is my first attempt on my Performer. I will be posting results of the 2nd attempt later.

A few takeaways - This was a delicious, quick and easy cook. I usually am more of a smoker, and avoid direct heat so this was stepping out of my comfort zone. The meat was a bit fatty, so I will look to trim it next time or just buy a less fatty piece of meat. The local grocery store has definitely been slacking in their cuts lately, hopefully this is not the beginning of a trend. I will be posting attempt 2 later, I used my new member to the Weber family for that one.

Perfect amount of char on that meat and tacos are suppose to be sloppy, they look perfect to me!!!
