Well the candy man in in the house!

Trying my hand and candied salmon for the first time.

Starting with 3 1/2lbs of fresh Atlantic Salmon from Costco.

Into the dry (soon to be wet) mixture..start layering

Now into the fridge overnight......TBC tomorrow morning....sleep tight ppl

Sounds like "Gravad" Salmon. But the sugar/salt ratio is off.(for a traditional Swedish one) After about 4 days the salmon would be cured and done...No need to cook it more. But im looking forward to se the end product. (and im not a big fan of gravad salmon) :)

I did around three hours till it was tacky to the touch. Also had a fan running on low to help it along.

No worries Paul.

Also drizzled syrup and oil on the respective pieces once off the smoker before they went into the fridge.
