Canada winter stuffed pork roast

We finally got some nice weather here in Canada today(-10). Thought I better get the 22” WSM going. Cooked a stuffed pork loin with chicken breast inside. Cooked for 3 hrs at 280*. Added apple wood chunks as well.

You're having a heat wave! I hope your meal was enjoyable; thanks for sharing your pics.
 
Way to beat that sweltering heat and get your cook done, Mike!! :ROFLMAO: I've never heard of a chicken stuffed pork roast either, but I've stuffed lots of other stuff (that's a lot of stuff) into pork roasts in the past, so why not?!? Have you done this recipe before? Any seasoning or other treatment of the chicken before stuffing? Sounds interesting, and, I'd expect, results in some moist chicken breast. .....the gears are turning (or maybe slipping, I can't tell anymore!)

I just would worry that with 2 relatively lean proteins like that one of them (most likely the pork) would get over cooked
 
Looks delicious Mike. +7 here on the East coast yesterday so warmer than you. I did pork chops but that roast has me wanting to do one now. Maybe next week!
