Can you smoke without a water pan?

If you've got a 2009 or newer WSM and you've still got the heat shield, you can wrap the heat shield with foil and use it empty in lieu of the water pan. That's what Harry Soo of Slap Yo' Daddy BBQ competition team is doing with great success...he never uses water.
 
So - what's the benefit of not using water? Just saving on the hassle? You still need something to keep the drips off the coals?

The water pan (or clay pot saucer) is still place, just no water in it.
Wrap with heavy-duty foil for easy clean up.
