Caldo de res. (beef stew)

My plan was to do this cook outside. But since Maribel is the chef here she didn't like the idea of me smoking the beef for the stew. :(
Probably wouldn't of tasted good if I made it...:o

Here's how she does this stew.
We buy a pack of assorted pieces of beef with and without bone.

Put the beef in a pot in medium heat for about 1 hour 20 min. After that time you remove some brown stuff it leaves on the side of the pot and any "foam"

Then it goes to a bigger pot with corn and cilantro and they get a 15 min head start.

Then the rest of the veggies go in.

It's done when the potatoes and carrots are tender. Add salt if needed. Usually 2-3 tbs we add.

Plated and ready to mix in the rice

We add the rice and 1/2 a lime and some red tapatio sauce or red homemade red thin salsa. With a side of four tortillas with a little butter.

Not recently... maribel tried about 10 yrs ago but now that we have more experience coking we wil talk to my mom and ask for her recipe.
