Last night I cooked three butts. Two were just over 8 lbs. one just under 8 lbs. Easily 24 lbs. They were bone in Smithfield.
Rubbed, minion cook, kingsford, 240* for 12 hours. Final temp 192-202. foiled with my Lexington vinegar sauce for two hours. Cleaned and pulled.
Yield: 8.5 lbs !!!
Yea, I had cooks samples along the way but not more than 0.2 lbs. What gives? Are they loaded with water now?
