Been craving some lamb, so picked up a butterflied 1/2 leg and started the prep work. Fresh sprigs of Thyme & Rosemary. Six cloves of smashed garlic. Salt & Pepper.
Added a bottle of Zin
Covered and in the fridge for 24 hours for tomorrow night's dinner.
Planning on a little Kiawe wood and the herbs from the marinade on the coals. Starting direct for a sear then indirect to finish. At least that's the plan so far.
