Butt up to 160 after only 4 hours?

I've been a member of the forum for a few years but still consider myself a beginner. I'm doing my first butt in quite awhile and the internal temp of this 7.5 .lb butt is already up to 160 after only 4 hours. Does this seem right? I double-checked my temps with a second meat thermometer and it confirmed I'm right under 160. Does this seem normal?

Butt was not even at room temperature - I only let it sit on the counter about 1.5 hours and it was still somewhat chilled when I put it in my smoker. The smoker has been 225 - 250 the whole time.

Does not seem outrageous to me. Depends where the thermometer is in relation to bone/fat etc. You may find it will siut there for a very long time until the collagen converts.

I agree with Tom: It's probably right but you're about to hit the brick wall (aka stall). Just let it ride and your patience will be rewarded.

Thanks. I forgot and was thinking I would cook it to 165 like a porkloin in the oven. I still have quite a ways to go to get to 190

We're good. Hitting 180. Getting very hungry.

Broccoli salad already made, corn on the cob next. Might go see if I should put the cobs in the smoker for the last hour or two?
