Butt another question?

I'm cooking a 8lb bone in butt HH. 4hrs now at around 300 degrees I've usually foiled at this point and tossed in the oven to finish, can I let it ride in the wsm at those temps and not foil and have a good result? It's at 168 internal temp now just curious.

I might be too late on this, but yea Jeffery, just foil and let it ride on the WSM..

I tyically run my OTG at 300 degrees on a butt roast. I foil at 160 degrees internal. It is done when it is ready to pull. I keep checking with a couple of forks. "When it is done, it is done."

I find that often the roast is ready to pull at 205 degrees but the last one wasn't finished until internal temperature was at 212 degrees (like the man said, "It is done when it is done"...
