Butt 8 lbs in 7 hours, ok?

If I was real tight on time and need to speed the process of cooking a butt to 6 hours but wanted it to be as good as a long low and slow cook (if that's possible), how would you cook a 8lb butt? I was thinking on the smoker for the first 1.5-2 hours to get a good smoke to it, then move it to the oven and bump the temp up to 350-375 to raise the temp to 170 and then back to the smoker for 225-250 to allow it to finish low/slow and break down the tissue up to 190-195. By the way, the trick is, my camp has an electric smoker so i can bump the temp up, that's why the oven comes in play.

will this produce an outstanding butt or will it be much less satisfying than 12 hours of low/slow? any suggestions? sometimes at camp i just don't have 12-13 hours and need to do it in 7 or not at all.

You can just cook the butt at higher heat from the get-go, say ~275, then, 3-5 hours in, foil it if you wish (I don't) to speed cooking, raising the heat to ~325.

Cooking smaller butts (like 5.5-6 lbs) will also work in your favor.

I did 2 not long ago that were 5.8 lbs each and cooked them at 325 start to finish; 5 hours--til the meat was sliceable/chop-able, not pullable (I chopped it). I would have had to go another hour or two to get to pullable. I didn't foil at all but could have, which would have got the butt to pullable in a shorter time. It is not my preference, I'd rather cook slower (I usually cook ~275 unless I am doing an overnighter) but the meat was quite good, tender, flavorful.

Bryan,
That is so funny, your link is from a guy in the area here. before I got started with the WSM I took Mr. Kick ***'s BBQ class. Great class had a good time and ate alot of food. He cooks with a trailer mounted Lange Model 84 (nice unit)

Cut the butt in half and cook two 4 lbs butts.
