If I was real tight on time and need to speed the process of cooking a butt to 6 hours but wanted it to be as good as a long low and slow cook (if that's possible), how would you cook a 8lb butt? I was thinking on the smoker for the first 1.5-2 hours to get a good smoke to it, then move it to the oven and bump the temp up to 350-375 to raise the temp to 170 and then back to the smoker for 225-250 to allow it to finish low/slow and break down the tissue up to 190-195. By the way, the trick is, my camp has an electric smoker so i can bump the temp up, that's why the oven comes in play.
will this produce an outstanding butt or will it be much less satisfying than 12 hours of low/slow? any suggestions? sometimes at camp i just don't have 12-13 hours and need to do it in 7 or not at all.
