So friends have told me they loved the Bison meat and I thought I would try it tonight. Did a quick fry of some yellow onions, sage, kosher and fresh ground along with a teaspoon of Worcestershire and a teaspoon of EVOO. Very lean meat.

Looks good. A bar in Ohio used to have buffalo burgers but I have never seen it sold in stores.
 
WOW! Looks great Bill, how the burgers? I tried them a couple if times cooked by others, very dry andI know that's because they're lean. I don't think they seasoned them right, I'm not sure if there's a right or wrong way but I was really turned off. Just wondering how yours turned out. They look great, how about the taste and what seasonings did you use? Thanks for sharing Bill.
 
Gene they are a 90/10 meat, you will do best to add a little something like I did with the EVOO. Mine came out good but I cooked them to a 135 internal so they were what I would call medium rare with a nice char on the outside. Very juicy.
I enjoyed it, but one of the burgers was a little thinner and it got to 145-150. It was a little drier but still juicy inside.
I got to tell you the Bison meat is leaner than skinless chicken and has no steroids or antibiotics. Extremely healthy for you.
But in the end I enjoy 80-20 Chuck more flavor wise, the flavor on the Bison was very mild.
 
I love buffalo, ground, sausages, and would love one of these buffalo burgers! Nicely done, stay thirsty my friend!
 
And Bill strikes again!! Life is good and those burgers look super!! Nice ...I'd eat up a couple those quick!!

Bison is not dry at all if you cook them right. Sprouts a store similar to Trader Joes sells ground Bison, Elk, Deer and even Kangaroo in the frozen section and most of the bigger chain stores sell ground Bison
