My wife has been wanting me to smoke Brisket since I got my WSM in January. In a recent shopping trip two days ago she unknowningly bought tenderized meat.
Its a small point cut corned beef brisket 3.90 lbs.
The meat has been tenderized with Papain.
My question is, What is suggested as a rub for something "pretenderized" with stuff. Will I still be able to save it?
