brisket on two levels -- pan or grate?

Hello again,

I will soon be smoking a lot of brisket, and will be using both levels of my 22.5.

When I smoke one brisket, I put the meat directly on the top grate, low and slow.

How should I use both levels? Is it OK if the top one drips on the bottom one? Or should the top one be in a pan?

Why not scatter them and put them both in a pan?

This way you get the juices of both pans that you can use to pour over it when done or add it to your sauce.
 
Gil,

No problem using both grates. I'd have an issue if you were cooking chicken over ribs; but brisket over brisket is just fine. Check each individually for tenderness as they'll most likely cook at a little different speeds due to the slight temp difference.

I wouldn't pan either one, myself.

I've never smoked two briskets on seperate grates, but I'd think that the bottom one might end up better since it's basted by the top one.

I'm going straight on the grates, probably one directly over the other, and maybe switch them half way through. Let them drip on each other.

Got the WSM 22.5 yesterday. It's beautiful.

Thanks. I'll be using the grates, no pans. And may move them around mid-way through the smokd.
