Brisket on the performer


 
Like everyone else has stated - it looks GREAT! I've never tried hickory wood with beef…how was the flavor?!? I've only used mesquite (if any wood smoke at all with beef)...but I'm gettin' ready to get some oak chunks to add to my other wood choices!

How are you liking the SJS for a mini? Seems there are good and bad points for both the SJS and SJG...I'm still trying to make my decision :confused: ....
 
I really loved the hickory taste with this brisket. I think a 50/50 of oak and hickory would be the ticket.
I am totally thrilled with my SJ mini. It is very consistent running between 200-250 for 5-6 hours on a minimal amount of KB. I haven't had any issues yet with the SJS. The bottom vent never has clogged yet, using the $1 collander .
