Brisket on my Preformer

Dusted off my Preformer for a brisket smoke at the start of the year. Along time ago now (before I bought the WSM).

Started by mixing some rub along with some dijon mustard and vinegar



Rubbed with the wet rub



Wrapped it up and into the fridge for two days




Nearly ready


couple of hours in








It was my first ever smoke using coals. I had moved over from a Digital Bradley Smoker that my family got me at Christmas.

As neat as the DBS is theres just something about smoking with coals. Must be my inner caveman ;)
 




The bark is a little charred looking because the temp was to high for a bit too long. I was running it at 350'C instead of 350'F because I was reading the thermometer wrong DOH!!! I was so annoyed when I spotted my mistake.

Wont do that again!!

Foiled it and wrapped it and let it rest in a cold oven for a few hours





It was pretty damn good if I may say so. Lovely crunch from the bark. Nice and moist inside :)

Served it up with a giant cous cous salad and a tarragon dressing. Forgot the picture of the plated dish :(

I love the use of the performer. I don't have a smoker (or 7) like many on here, so seeing people prepare large roasts/cuts on the performer is inspiration to do more of them myself. That pulled piece looks perfect to me!

Luke, We have had the Preformer for yeeeears. I'm sad to say it was a bit of a dust collector. It might have seen a bbq once a year.

Only realised the potential this year! It's amazing and I'm in love.. lol
