Brisket Issue on 22.5" WSM


 
I agree with Alan, if it was a packer it should weigh around 10 lbs or more. Place the thermo in the point. I'll try to upload a pic of it when I get a chance.
 
I am having the same issue today. Mine is cooking much more quickly than expected. Thanks for the advice Today is my first attempt at brisket and its cooking so fast it should be done in 7 isn hours.

I also have the 22.5 WSM, I am having a heck of a time keeping the temp steady using minion method.

Wishing you a great outcome today !!!

There's so many outside variables that can and do affect temperatures.
Wind and (sometimes) the pitmaster's over eagerness are only a couple in that list of outside variables.
The Minion method is not one of those variables.
If anything, the method is based on providing a controlled, long term burn rate.
