Brisket, Hog Apple Beans, and Potato Salad

This past Sunday, I smoked a 6.4 lb choice Brisket flat. I used 3 medium mesquite chunks for smoke, a home made rub and no injection.

Here it is rubbed and ready to go on.

It turned out nice and tender with great smoke flavor.

I also made some of Keri's Hog Apple Baked Beans for the first time. To me, they were great and the best beans that I've ever made. My fiance asked, "Whats with the apples?" She said they would've been good if I had left out the "soggy apples." I have to disagree. I think its a fantastic bean recipe.

To complete the meal, I made Myron Mixon's Potato Salad. I left off the bbq rub sprinkle and just let the potato salad stand on its on. It was very good. My fiance loved it. So it was 3 for 3 with me, and 2 out of 3 with the lady. Not too bad I suppose.

Beautiful brisket! You might want to re-consider your fiancée's opinions -- or at least your reaction ;).
 
Good looking brisket! And I love apple pie filling in beans, never had anyone that said they didn't like it. Last time I substituted fresh peaches and that was really good.
