This is my second attempt. First brisket about 3.5 lbs from costco, cooked 225-250 about 12 hours. The meat was tasty but tough, sliced thin and cold was a good sandwich. Anyhow, I'm ready for another try, same size brisket. Your suggestion are greatly appreciated. Thankyou. </div></BLOCKQUOTE>
If you can only find a brisket flat look or ask for an untrimmed flat in the 6-8lb range. You want to pick out one that is uniform that does not taper from thick to thin. You also want to pick out one with a good amount of fat on it. Pretty much the same goes for a whole packer, but look in the 10-12lb range.
12 hours for a 3.5lb brisket is WAY TOO LONG, should have taken closer to 6 hours. Cook your brisket in the 245º-260º range until you hit 160º-165º, then foil and continue to cook until tender, generally in the 190º-200º range, but temps are only guides, tenderness determines 'done'.
