brisket help

This is my second attempt. First brisket about 3.5 lbs from costco, cooked 225-250 about 12 hours. The meat was tasty but tough, sliced thin and cold was a good sandwich. Anyhow, I'm ready for another try, same size brisket. Your suggestion are greatly appreciated. Thankyou.

I'm no expert but way to long on the cooker.

If you can only find a brisket flat look or ask for an untrimmed flat in the 6-8lb range. You want to pick out one that is uniform that does not taper from thick to thin. You also want to pick out one with a good amount of fat on it. Pretty much the same goes for a whole packer, but look in the 10-12lb range.

12 hours for a 3.5lb brisket is WAY TOO LONG, should have taken closer to 6 hours. Cook your brisket in the 245º-260º range until you hit 160º-165º, then foil and continue to cook until tender, generally in the 190º-200º range, but temps are only guides, tenderness determines 'done'.
 
Cook it High Heat 325º-350º. If it has any part of a fat cap on it, place the cap down. Cook till an internal temp of 150º or about 1.5 hrs. and then foil and cook till fork tender, this will take somewhere around 1-2 hrs. after foiling. I just have to ask, what made you cook the first piece of a brisket for 12hrs.? WOW that's a long time for such a small piece of meat. Next time ask one of the butchers at Costco for a whole flat in cyro that has a nice fat cap on it. They have them whole in the coolers. HTH

Buy a whole packer (10-15 lbs) at Walmart cook it at 240 until it's 200 degrees. 3 lbs is just too small
While you're doing the brisket put a pork butt or shoulder under it. It will take a little longer than the brisket, but it's as easy to do both as one.

I should say that I usually start about 8-9 pm and the brisket comes off about noon and the butt about 3pm.
