Brisket burger!

Howdy... Busy day and ended up taking the little guy to the new pirates movie this afternoon!! Got home and the wife had to go to a thing so me and the boy were stuck Preping the brisket for tomorrows cook!!! While trimming the brisket I asked my boy what he wanted to eat(after eating his weight in popcorn) he says burgers? Wow I have no burger in the house...butt as luck has it the 12 lb brisket is about 3 inches longer than my WSM is wide!! So...what the heck, burger it is!!!

I was in our neighborhood grocery store about 3-4 months ago, eyeing a select grade packer they had. It was priced at $2.99/lb. About a day before the "pull" date, I saw the butcher guy poking around out there. I said "So, when that brisket hits its expiration date, you gonna make me a great deal? Like half off?" He says "Nope, I'll just throw it in the ground round pile."
