Results: Coming out of the hold cooler after 3 hrs I separated the flat and point. Cut a couple slices of the point. OMG That is some gooood eatin. Very moist, good taste, almost made the all nighter worth it.

Problems: Well dinner was planned for 6-7 pm. I estimated a cook time at 18-22 hrs. Off a bit. So after the 3 hr hold I had too much time till dinner. I decided to ice the meat to bring the temp down fast and put in frige. WELL, I forgot to take out of the cooler and my neighbor asked me to come over and have a beer. Well that led to another beer, it's ok, it's sat afternoon.
So I come home and the cooler is open, STUPID ME I LEFT THE COOLER ON THE KITCHEN FLOOR.
oH SH T! the point is gone!!!!

. I go outside and look everywhere finally finding the plastic zip lock with a hole in it and about 1/2 (2lbs) of the point gone. WHERE'S THE DOG?????????
Mick, my beagle, fine fellow that he is, is hiding in his crate, belly hard as a rock, he knows he done a BAD thing!!! But Dad, says he, I couldn't resist, the meat was so good....

Well the rest of the point went to the neighbors dogs, after all he did give me a couple Coronas.

The flat turned out I didn't leave enough time for it to properly come back to temp, nore did I realize how long it would take. Oh I did cook 2 racks of spares and a BIG pot of my DFB (**** fine beans) So all in all I did my first all nighter.

Would I do it again? Well just let me say having done one I may try a HH brisket next.

No pics of the plated dinner, sorry and all the others are still in the camera, but hey you all know what brisket looks like anyway.

Oh here's one of the thief:

You don't make anything easy for Beagle. We know.

Now, why my wife continues to get upset when Aubie eats her chapstick after leaving her purse in the same place over and over again, I don't understand.
