Brine Turkey - Longer then 24 hours?

Hey gang,

Quick question. I'm going to be smoking a turkey on this comming Tuesday for my family. Only problem is, tomorrow is the best day for me to get the brine made up and the bird in it. I'm using the Apple Brine, and the question is, do I run into any problems by leaving the bird in the brine for over 48 hours?

If not, I'll rearrange my schedule to brine the bird starting on Sunday....it would just be a lot easier if I can do it tomorrow.

Were you planning on letting it dry in the fridge? I usually brine for 24 hours then let it dry on a wire rack in the fridge for 24 hours. It helps to get the skin crisp.
 
I am. But its going in the smoker on Tuesday. So either I start the brine Sunday night (not very convenient) 24 hours, dry over night in fridge. Or I start brining today. But worried that it won't come out of the brine until Monday night.
 
In my opinion one of the factors is how big your bird is. I've brined 22 lb birds 36 hours with no problem.
